Missing your melon wrapped in prosciutto? No need! Thin slices of pastured pork loin you roast yourself allows you all those lovely flavors you’ve been missing…in Paleo Style!
Ingredients
  • 4 fresh mission figs
  • 2 ounces roast pastured pork tenderloin, sliced very thin into eight pieces
  • Freshly ground nutmeg, to taste
  • Parsley, for garnish
Instructions
  1. Wash and halve figs
  2. Layer one half of a fig, followed by one piece of pork, then another half and another piece of pork
  3. Repeat with remaining figs
  4. Sprinkle with nutmeg, to taste
  5. Garnish with parsley sprig
