Paleo Salad Lyonnaise

Using uncured bacon from pastured pork and eggs from foraging hens, this easy to make salad is ready in no time!
  1. Broil bacon on wire rack
  2. Meanwhile, bring a pot with two inches of water to boil, then reduce to simmering
  3. Stir in the lemon juice
  4. Crack eggs open onto small saucer and let them slide into the simmering water
  5. Allow to poach for two minutes
  6. Wash, tear and spin dry the lettuce
  7. Mix the lettuce with olive and fresh herbs
  8. Divide the lettuce into two portions and place on two salad plates
  9. Top each with one slice of bacon and one poached egg
