Summer produce strikes again! The 'baby' varieties of many veggies are sweeter and more delicate, so give this farmer's market special a try.
Ingredients
  • 2 pints baby squash (flowers optional)
  • 1 pint baby shiitake mushrooms
  • 2 tablespoons coconut oil
  • 2 cloves garlic, smashed
  • 2 tablespoons freshly chopped basil
  • Freshly ground pepper, to taste
Instructions
  1. Thoroughly wash squash and mushrooms
  2. Heat oil in cast iron skillet over medium
  3. Add garlic and saute 1 - 2 minutes or until nicely browned
  4. Add squash and mushrooms and saute 5 - 7 minutes longer
  5. Add basil
  6. Turn off heat
  7. Cover pan and let sit a few minutes
  8. Grind pepper on top, to taste
  9. Serve with your favorite protein to make a balanced Paleo meal
