Pistachio "Crusted" Salmon

Using a 'crust' made only of organic pistachios makes this simple prep completely Paleo.
Ingredients
- 1 pound wild king salmon fillet, skin on
- 1 tablespoon coconut oil
- 2 tablespoons macerated pistachios
- lemon wedges, for garnish
Instructions
- Pre heat oven to broil
- Debone salmon
- Place oil in glass or ceramic baking dish
- Place salmon in dish, skin side down
- Press pistachios onto flesh of salmon
- Broil 15 - 20 minutes; check to make sure internal temp = 160 if not sashimi grade
- Remove from oven
- Serve on a bed of your favorite greens, with lemon as garnish
