Sauteed Artichoke Hearts Amandine

Ground almonds come in handy to take the place of white flour to 'dust' the artichoke hearts with, prior to a quick saute in olive oil. Using frozen artichoke hearts (with nothing added) is an option to save time, while staying Paleo.
Ingredients
- 2 tablespoons extra virgin olive oil
- one pound artichoke hearts
- 2 tablespoons ground almonds
- 1 shallot, minced
- freshly ground nutmeg, to taste
- 2 tablespoons parsley, minced
Instructions
- Heat oil in skillet over medium
- Toss artichoke hearts with almond flour to coat
- Saute in oil for three to five minutes, stirring occasionally
- Add shallot and cook one minute longer, until browned
- Sprinkle with nutmeg, to taste
- Top with parsley
