Soft Boiled Eggs on Greens with Coconut

A runny, soft boiled egg is the perfect balance between raw, which has more nutrition, but also a higher risk of bacterial contamination, and hard boiled in which much of the nutrition is cooked out. Combined with veg and healthy coconut, this is a quick & delish meal or snack!
Ingredients
- 4 cage free organic eggs
- 4 cups mache lettuce
- 2 tablespoons coconut oil
- Freshly ground pepper, to taste
Instructions
- Place cold eggs in pot of cold water.
- Bring to boil, then set timer for six minutes.
- Wash and spin dry mache.
- Divide into two bowls.
- When timer rings, crack open two eggs in each bowl.
- Add one tablespoon of coconut to each and let melt from heat of egg.
- Top with freshly ground pepper, to taste
