A light and lovely spring salad. Perfect for a starter, or add some grilled shrimp to create an entree!
Ingredients
- 1 head Butter or Bibb Lettuce, washed, spun dry and torn
- 1 tablespoon extra virgin olive oil
- 1 small ripe avocado, sliced
- 1 small bulb fennel, fronds removed, cored, and sliced thin
- 1 ounce black truffle, shaved
- 1 small tangerine, sectioned
- Freshly ground black pepper, to taste
Instructions
- Toss lettuce with olive oil in medium bowl
- Place half in each of two salad bowls
- Top with avocado and fennel slices
- Shave truffle on top
- Scatter tangerine segments on top
- Finish with freshly ground black pepper, to taste
