Mango & Tomato Salsa

The sweetness of mango offers a nicely balanced counterpart to the tang of the lemon and the heat of the jalapeno. Who needs chips?
Ingredients
- 1 ripe medium sized mango, peeled and coarsely chopped
- 1 ripe red Beefsteak or Heirloom Tomato, coarsely chopped
- ½ small red onion, chopped
- 2 cloves garlic, smashed
- 1 small jalapeno (seeded if you prefer less heat), minced
- juice from ½ lime
- 2 tablespoons fresh cilantro, minced
Instructions
- Combine all in a small bowl
- Alternatively, puree all ingredients if you prefer a smoother texture
- Cover tightly with plastic wrap and chill several hours before serving
- Serve with crudite as an appetizer
- Use the leftover portion as a marinade for chicken
