Wild Mushroom Saute

Vary this recipe based on where you live and what time of year it is. Using a combination of different mushrooms yields a different, but equally delicious new version each time!
Ingredients
- 2 tablespoons olive oil
- 4 ounces Shittake Mushrooms
- 4 ounces Portabello Mushrooms
- 4 ounces Enoki Mushrooms
- 4 ounces Oyster Mushrooms
- 6 cloves fresh garlic, smashed
- 2 tablespoons minced parsley
- Freshly ground black pepper, to taste
Instructions
- Thoroughly wash, dry and chop all mushrooms
- Heat olive oil in cast iron skillet over medium
- Add mushrooms and saute, stirring frequently, until browned
- Add garlic and cook one minute longer
- Turn off heat
- Sprinkle on parsley
- Drizzle with pepper, to taste
- Serve with your choice of Paleo protein atop a bed of your favorite leafy greens
