Simple Stir Fry

It doesn't get easier than chopping up any and all of your favorite veggies and proteins and giving them a quick stir fry in the skillet! Make extra for lunch tomorrow, whether you're eating it at home or sending it with the kids to school!
Ingredients
- 2 tablespoons rendered duck fat
- 1 cup chopped white mushrooms
- 1 medium yellow onion, chopped
- 2 cups broccoli florets
- 1 large red bell pepper, sliced
- 4 cloves garlic, minced
- 2 pounds pasture raised chicken thighs (save skin and bones for stock), chopped
- 1 large carrot, grated
- 2 scallions, chopped
Instructions
- Heat oil in skillet over medium high
- Add mushrooms and onion and brown, stirring for 5 minutes
- Add broccoli and red pepper and cook 5 minutes longer
- Add garlic and cook 30 seconds
- Remove veggies from skillet and set on platter covered in foil
- Add chicken and cook 4 - 5 minutes until internal temperature reaches 160
- Arrange chicken on top of platter and scatter carrot and scallions on top
