Holiday Spiced Meringue with Toasted Pecans

Forget gluten-free baking...how about grain free all together? Light and easy to prepare, they're a great holiday option for something small but sweet at the end of your special occasion, holiday meal.
Ingredients
- 4 egg whites
- 2 cups honey
- pinch of salt
- dash real vanilla extract
- ½ tsp. cinnamon
- ¼ teaspoon ground ginger
- Dash freshly ground nutmeg
- 2 tablespoons ground raw cacao powder
- 1 ounce pecans
Instructions
- Preheat oven to 225º F
- Beat all ingredients together until stiff peaks form
- Shape as desired
- Bake on parchment paper for roughly one hour
- Do not remove from oven at once, but turn off the oven, open the door, and leave for at least 5 minutes
- Cool gradually, away from draft
- Meanwhile, turn up oven to 375
- Toast pecans for 5 -7 minutes
- Remove from oven and let cool
- Once cold enough to handle, grind finely in nut grinder
- Serve meringue with pecan dust sprinkled on top
