Oven Roasted Asparagus with Duck Fat
Oven Roasted Asparagus with Duck Fat & Garlic

In season nearly all year round in California, this easy to prepare veggie dish goes decadent with the addition of rendered duck fat... Delish!
Ingredients
- 1 bunch organic asparagus
- 2 tablespoons rendered duck fat at room temperature
- 1 small bulb garlic, minced
- 1 Meyer lemon, juiced
- Freshly ground black pepper, to taste
Instructions
- Preheat oven to 450F
- Wash, then trim ends of asparagus
- Place in baking dish
- Brush duck fat onto asparagus, coating evenly
- Sprinkle minced garlic evenly over asparagus
- Cook 8 - 10 minutes, then shake pan to turn spears
- Cook 3 - 5 minutes longer, until bright green and slightly charred
- Remove from oven
- Place on plate using tongs
- Squeeze lemon juice on top
- Garnish freshly ground black pepper on top, to taste
