Garlic, lemon + basil - three basics that create a lovely flavor profile that works beautifully with many proteins + veggies. Opting for spirialized veggies in place of pasta is an easy way to not only make this dish suitable for Paleo and Keto, it simply keeps you feeling lighter and satiated, not stuffed!
Ingredients
- 2 T Raw butter or coconut oil
- 8 cloves smashed garlic
- 1 pound wild, shell-on shrimp
- Juice from 1 Meyer Lemon
- 1 cup chicken lemongrass bone broth
- 2 cups spiralized zucchini
- 1 handful fresh basil, torn
- Himalayan Salt, to taste
Instructions
- Heat oil in skillet over medium
- Add garlic and saute until browned, 3-4 mins, stirring
- Make a cut down backs of shrimp but leave shell on
- Place shrimp in skillet and cook 1 minute per side until pink
- Remove shrimp from skillet and place on dish
- Add lemon juice to skillet
- Add zucchini noodles
- Add bone broth and saute 3-4 minutes
- Place the noodles on two plates
- Top each plate with half the shrimp
- Add basil
- Salt, to taste
