Interesting Leftovers

Can you give me some ideas on what to do with leftovers, other than just eating them plain and cold the next day?

Ah!  You’ve come to the right place as I do tend to consider myself quite the concoction expert, and often they’re made up of odds and ends that came from last night’s dinner, yesterday’s lunch and a bit of some fresh herbs that were leftover from a recipe.

  • Soups, stews and sauces are always good options, especially if your leftovers include bones and skin.   You can throw them all in the dutch oven, add some water, your extra fresh herbs, some garlic and perhaps some wine and let the mixture simmer away.  This, like most stews and soups, is often better the next day.  After you’ve eaten most of the heartier bits, like pieces of protein and veg, you can then strain out the bones and use the liquid as the base of a marinade for yet another dish!
  • Another preparation is to make ‘salads’, such as tuna salad, but in Paleo friendly terms.  I’ve mashed together leftover chicken and turkey with a fork, added coconut oil, slivered almonds, salt free curry powder and a little bit of raisins and created a curried protein salad, which I served on a few leftover leaves of Bibb Lettuce.
  • Purees are yet one more idea.  That head of cauliflower that’s needs to be eaten before it goes bad can be saved by steaming, pureeing with some garlic and olive oil, and then adding in that leftover baked salmon to create a Paleo Salmon Mousse which goes quite nicely atop a Mache lettuce salad with some avocado.

Sweet with savory, greens with fruit, spicy with sour… there really are no flavor rules as to what Paleo foods you combine with what when it comes to making good use of leftovers!
