Green Garlic and Greens

- 2 tablespoons coconut oil
- 1 large shallot, diced
- 1 bunch green garlic, washed, chopped
- 1 bunch red, curly kale, washed, shredded
- 1 bunch rainbow chard, washed shredded
- Freshly ground pepper, to taste
- Heat oil in cast iron skillet over medium-high
- Add shallots and saute until softened and brown, 3 -5 minutes
- Add garlic and cook 1 minute longer
- Add greens and cover skillet for 3 - 5 minutes, checking every minute to stir
- Turn off heat
- Serve with your favorite protein on top to create a balanced Paleo meal
