Melon Puree with "Psuedo Prosciutto'

Using free range turkey in lieu of sodium heavy prosciutto, and puree of melon instead of a big chunk offers a new Paleo friendly version
Ingredients
  • ¼ small cantaloupe, cubed and frozen
  • 4 ounces thinly sliced turkey
  • Frisee, for garnish
  • Freshly ground black pepper, to taste
Instructions
  1. Puree melon
  2. Place in four small cups
  3. Serve with turkey, garnished with frisse
  4. Sprinkle on black pepper, to taste
