Garlic, lemon + basil - three basics that create a lovely flavor profile that works beautifully with many proteins + veggies. Opting for spirialized veggies in place of pasta is an easy way to not only make this dish suitable for Paleo and Keto, it simply keeps you feeling lighter and satiated, not stuffed!
Ingredients
2 T Raw butter or coconut oil
8 cloves smashed garlic
1 pound wild, shell-on shrimp
Juice from 1 Meyer Lemon
1 cup chicken lemongrass bone broth
2 cups spiralized zucchini
1 handful fresh basil, torn
Himalayan Salt, to taste
Instructions
Heat oil in skillet over medium
Add garlic and saute until browned, 3-4 mins, stirring
Make a cut down backs of shrimp but leave shell on
Place shrimp in skillet and cook 1 minute per side until pink
Remove shrimp from skillet and place on dish
Add lemon juice to skillet
Add zucchini noodles
Add bone broth and saute 3-4 minutes
Place the noodles on two plates
Top each plate with half the shrimp
Add basil
Salt, to taste
