Artichokes, Baby!
Or rather, baby artichokes!
Quite the opposite of a few recent posts I've done which featured GIANT fruits.. look what I found the other day: little teeny, tiny baby artichokes!
As with many other 'baby' versions of fruits & veg, they were more delicate and almost sweet compared to their larger (and sometimes tougher) counterparts,
Below is but one way to serve and enjoy, tossed with wild (also baby) arugula, blanched whole almonds (to remove the skin) and some olive oil with lemon juice. Finish off with some freshly ground black pepper and eat as a starter.
