Chicken in a Pot- Another Easy Meal
This has GOT to be one of the easiest preps I can think of! The only caveat as that one should be at home to mind the oven, cooking the chicken on low heat for a few hours, but there's no need to be actively cooking during that time!
Choose a free-range, organic chicken and place in a large, oven-safe pot. Add some chicken or beef stock- either homemade or a purchased, natural brand.
Throw in some fresh herbs (I used sage on the dish I'm serving tonight), some chopped spring onion, carrots and celery, a squeeze of fresh lemon and a dash of olive oil.
Cook at 325 for a couple of hours, basting every 20-30 minutes or so.
I always prefer to do dishes like this a day ahead as it's always tastier the next day! Let cool, then refrigerate.
The next day, about an hour before you want to serve, heat the oven to the same temp and double check that the inside of the bird has reached 160F.
About 20 minutes before you're due to serve dinner, make your fresh salad, and steam your favorite leafy greens.
Serve all together and enjoy another tasty Paleo Dinner with your family or friends!
