Chicken Saltimboca- Deconstructed
Traditional recipes would call for chicken cutlets to be dredged in flour and pan friend after being wrapped in bacon or prosciutto…here's a Paleo Friendly modification that is simply sublime!
-Flash-fry fresh sage leaves in olive oil in a cast iron skillet, remove and drain on a paper towel.
-Using clean & lean ham (I'm very particular about this- use it only if you can find one that has NOTHING added to it and is low in sodium. NO nitrates, nitrites, gluten, whey, ANYTHING other than 'pork' would be a no-go! If you cannot find it, I've done this recipe with sliced turkey and it's also quite nice!), quickly saute on each side and remove from skillet, tenting in foil to keep warm.
-In the same skillet, cook chicken cutlets for 4-5 minutes per side, testing inside to be sure internal temp has reached 160F.
-Assemble a serving platter with the chicken arranged beautifully atop a bed of fresh greens, the ham or turkey next to it, and the fresh sage presented nicely- one leaf atop each cutlet.
Enjoy with a fresh salad and some steamed broccoli, drizzled with flax oil.
