Citrus Lime Shrimp- Main Entree or Tapas Style
I've always loved shrimp! Growing up, my favorite dish was always Shrimp Scampi. Although I make that Paleo-Style now (simply by omitting the butter), there are so many other ways to do shrimp/prawns that are equally as delectable.
Here's one that you can serve as a starter, or tapas style along with some other proteins and veg, or as main course on top of your favorite steamed or sauteed leafy greens.
*Buy the shrimp or prawns with the peel still on; they'll taste much more fresh!
Combine some freshly squeezed lemon juice, a dash of orange zest, a sprinkle of red chili flakes (omit if you're following the Auto Immune Plan, some freshly ground pepper and freshly chopped cilantro. Whiz in a food processor, or, if you don't have one, chop by hand to blend well.
Peel shrimp.
Heat some olive oil in a cast iron skillet over medium and toss in some freshly chopped garlic- just briefly to allow to flavor to open up.
Toss in the shrimp and cook, keeping a close eye as they will be ready within a few minutes.
Remove from pan and toss in the mixture above.
Arrange on small plate (if doing Tapas style) with some quartered cherry or grape tomatoes and serve immediately.
Get ready to serve up a second round!
