Do you have a recipe for homemade jerky?

No!  Jerky is one thing that I've never really been into.  No particular reason, but since it's not something I typically fancy, I've  never experimented with making it.

However, there is a recipe for it in The Paleo Diet book!  Here is the formula to follow, straight from the source!  (The source being Dr. Cordain, of course…) 

"2# lean beef, trimmed of all visible fat, trimmed to 1" wide, 1/8" thick strips with the grain of muscle


(Easiest to buy a food dryer!) OR:  Dry in oven on ugreased cookie sheets.  Set oven to lowest temp and keep door popped open.  Maintain temp between 140 – 150 degrees.  Drying time varies from oven to oven from 4 – 12 hours.  Jerky is ready when chewy and tough.


To make a spicy variety:

Mix any combination of cumin, chili powder, garlic powder, onion powder, dry mustard, cayenne pepper, lemon pepper, turmeric, black pepper, white pepper, curry powder, then dip each piece of raw meat in the spice blend.  Let marinate overnight in fridge and then cook as above. "
