Eat Your Arugula!

Or Rocket, as my British hubbie calls it!

This leafy green, while being slightly bitter, imparts a lovely flavor to a salad.  Balance it out with some berries ( I used strawberries last night at dinner) and some healthy fat from avocado.  Drizzle on some olive and or flaxseed oil and add a twist of lemon, and you've got yourself a healthy, not to mention lovely, start to your breakfast, lunch or dinner.

Try it with peaches, brazil nuts and lime for another flavor twist.
