Great Alternative to My Paleo Yam Baked Fries- Yam Chips!
Using my mandoline that I blogged about a few days ago, I also prepared some homemade yam 'chips'! This is a great option for you endurance athletes out there who, like me, need a clean source of starch for our long, grueling sessions!
Easy as proverbial pie!
Just wash some yams, cut them on the mandoline:
Then place on a wire rack:
After tossing with olive oil and a pinch of sea salt (also indicated for athletes to replace what we're sweating out!), then broil, flipping during cooking until cooked til your preferred level of crispness. Be careful not to burn 'em!
Remove from oven, let cool on racks and enjoy right away, or let cool. As the temp reduces, they'll get more and more crisp. You can store them in an airtight container and let them sit for a few days, too.
