Lean Pork Loin with a Dried Fruit ‘Stuffing’
Here's an EASY way to do lean pork!
-Combine chopped dried cranberries & apricots with water and heat over a medium flame until soft. Set aside and drain.
-Halve an organic pork loin and pat dry. Cut a slit down the middle of each half.
-Stuff the dried fruit into each slit and put both halves back together, tying with kitchen twine.
-Pepper the outside, then sear in a cast iron skillet for 5' per side.
-Let rest and be sure the internal temp has reached 160F.
-Slice and serve over a bed of your favorite greens with some salad.
Have the leftovers tomorrow for lunch!
