Mushrooms- Friendly Fungi (And Tasty, Too!)
MMMMMMMMMMM- Mushrooms!
Mushrooms are a great source of potassium,copper, riboflavin, niacin, and selenium.
In addition, mushrooms can reduce the risk of breast prostate cancers, help fight colds, the flu and infection as well as stimulate the immune system.
Versatile in cooking, they can be used in a saute with green leafy veg, roasted with root veg under a Thanksgiving Turkey, sauteed with spinach for your omelet or- here's a particularly tasty favorite, roasted as a side dish.
Many recipes will call for butter in this dish, but this dairy product is quite easily replaced here with extra virgin olive oil.
Heat olive oil in a cast iron skillet. Add sliced shallots and cook til translucent. Add a variety of local, organic
mushrooms and freshly ground pepper and cook over medium until they are tender. Stir in some chopped garlic and cook for a few
more minutes. Sprinkle with chopped parsley and serve with your steak (or your fish, or chicken…)
