Paleo Chicken Marbella- Recipe Makeover
Another successful recipe makeover:
Chicken Marbella!
One of our guests to our Paleo Christmas feast and I got to chatting, and she said she thought she had a recipe that perhaps was already quite Paleo: her Chicken Marbella recipe that's been a family favourite for years.
Turns out, she was right- it was indeed, nearly Paleo. All I needed to do was omit the capers and olives (not so Paleo due to their high added sodium content) and i was all set!
For 2-3 people with leftovers…
One small chicken, cut into breasts, thighs & drumsticks
2 bay leaves
1 cup prunes- natural, no additives!
1 cup dry white wine
1/2 cup olive oil
1 T oregano
4 cloves garlic
1/4 cup chopped fresh cilantro
Freshly ground black pepper
Place raw chicken in a large, flat oven safe dish (glass or ceramic). Combine all the following ingredients except the cilantro and pepper and pour over the chicken. Cover and marinate in the fridge overnight. The next day, cook in a pre heated oven @ 350F for 60 – 75 minutes, until internal temp = 160F. Finish off with a quick 3-5 minutes under the broiler for some nice color! Remove from oven, scatter cilantro on top and serve with freshly ground black pepper. Even better the next day for lunch!
