Paleo Sauces
Hello Nell,
I'd like to make a paleo sauce! So far, my eating has been sauceless (smile). I'm allergic to tomatoes, peppers, eggplant and potato (nightshades). I was hoping you could help! Maybe something with mushrooms?Thanks in advance, I really enjoy reading your blog! -Lea in Canada

Your question is a great one, and is asked quite often as people learn and get more comfortable with The Paleo Diet!
Here are some easy sauce ideas:
-Saute garlic, onion & shallots in olive oil til soft. Add Oyster & Chanterelle Mushrooms and saute about 10 minutes longer. Pour in some homemade chicken broth, bring to simmer and let cook til slightly reduced. Let cool, then pour into blender and puree. Warm back up before heating and use on top of spaghetti squash, or as a marinade for chicken!
-Heat olive oil in a cast iron skillet over medium. Add fresh garlic & ginger and saute til soft. Add some dry white wine and some Shiitake mushrooms and continue to saute. Pour in some homemade beef broth and a lemon grass stalk and bring to boil, then let simmer til reduced. Chill, remove lemon grass blend til smooth and then add a splash of sesame oil (ok to use in moderation). Use as a sauce for lean, grass fed beef and steamed broccoli.
-Combine fresh basil, olive oil, garlic, walnuts and lemon (use a ratio to your liking of the flavor combo) in a small food processor and whiz til smooth. Serve over piping hot steamed spinach with diced grilled chicken.
