Romanesco- Another Farmer’s Market Find…
Get a load of this beauty!
In the same family (not surprisingly) as broccoli and cauliflower, this cruciferous veg is high in Vitamins C, K and carotenoids, as well as dietary fibre.
How to prep?
You guessed it- good old garlic & oil!
I peeled whole cloves of garlic, roasted them in some olive oil in my cast iron skillet, then add some of the washed, chopped Romanesco and sauteed it for about 10 minutes, while stirring occasionally.
I added in a dash of red pepper flakes and it was a nice, but similar, alternative to one of my stand-bys, roasted broccoli.
