Seaweed. Perhaps your only context of it is either wrapped around a bundle of rice in sushi or washed up on shore at the beach?
Think again!
Aside from being a great source of iodine,iron, vitamin C, vitamin A, potassium, magnesium and riboflavin (B2), it simply tastes good and s really easy to prepare!
You can find many varieties at health food shops as well as Asian Markets, often in it's dehydrated form. Easily rehydrated with water, you can then toss it with other greens in a salad, sprinkle chopped garlic & lemon on top of it, use it as a bed of veg upon which to put any protein ( *and more veg!) ; use NORI as the 'wrap; instead of a tortilla; the possibilities go on and on.
Give it a try and expand the palate just a little more.
