The ONE White Food You SHOULD Eat- Cauliflower
As much as we need to be sure and avoid other 'white' foods, like processed grain foods, and white sugar foods, here's one white food that we can make room on our colourful plates for!
From a health perspective, cauliflower,offers phytochemicals, allicin, which can improve heart health and reduce the risk of strokes, and selenium, a powerful antioxidant. It also help to maintain a healthy cholesterol level, contains Folate,which is recommended for women who are pregnant or may become pregnant. In addition, it's an excellent source of fiber. Finally, it has been discovered that cauliflower, as well as other cruciferous vegetables, such as Brussels Sprouts and cabbage, contain substances that can affect the metabolism of estrogen in the body, and prevent breast and other female cancers.
Now, you ask, how should you eat it!
Raw, dipped in homemade guacamole.
Steamed, drizzled with cold pressed flax oil
Sauteed in garlic & olive oil, alone or with broccoli.
Steamed, then pureed with your favorite herbs, as a sub for mashed potatoes (we served this at our wedding, under rare grass fed filet mignon and sauteed kale- devine!).
Grilled, along with green & yellow squash, red bell pepper and Chinese Eggplant.
