Tired of Turkey? Have a HEN!
(shown with salad and sauteed chard)…
2 Hens
2 T Olive OIl
1 cup Parsley
4 cloves garlic
Preheat oven to 450F. Cut hens in half. Loosen skin. Combine oiil, parsley & garlic in food processor and whiz til smooth. Stuff herb mixture under skin. Place in glass or ceramic dish. Cook til internal temp = 160F (roughly 35 minutes). Remove from oven, tent for 10 minutes under foil. Serve warm with your fave veggies!
