Tomatillo Salsa
Salsa has GOT to be one of the easiest things to make!
Really, there is no formula that you must follow; and I'm often a fan of 'throwing in a little of this, and throwing in a little of that' methodology!
Last night, I made a tomatillo salsa in my mini prep food processor in about four minutes.
Ingredients:
- avocado
- red onion
- jalapeno
- garlic
- cilantro
- tomatillo
- Wash, cut into small chunks and throw everything but the avocado into the mini-prep.
- Whiz til combined, then refrigerate for about an hour.
- Right before serving, slice the avocado and place it on top, then serve:
We enjoyed ours atop a lovely wild caught piece of fish over salad and garlic spinach:
I love all kinds of salsa, and even if you follow the Paleo Auto Immune Plan, you can still make one without the tomatoes and peppers so that you can still enjoy your version of this tasty acoutrement to proteins and veg alike!
Who says it has to be spicy? Try peach with cilantro and lime or pineapple with parsley, scallions and lemon…just play!
