Yet Another Lovely Paleo Salad: Herbed Watercress with Pistachio & Avocado

-Wash and spin dry some watercress; I suggest one head per person as I like a nice, hearty portion!

-Throw in some fresh basil, cilantro and/or whatever other fresh herbs you fancy!

-Combine fresh lemon juice, olive oil, freshly ground black pepper and a squeeze of juice from one orange segment in a small bowl and stir with a spoon to combine.

-Toast some pistachios at 375 for about 10 minutes, turning once halfway through.

-Toss the dressing with the leaves.

-Serve on a salad plate with avocado on top, along with nuts scattered all over.
