Green Garlic and Greens

When it comes to veg, there is simply no such thing as 'too green'. The more leaves, the better, so mix and match to make your own fave combo.
Ingredients
- 2 tablespoons coconut oil
- 1 large shallot, diced
- 1 bunch green garlic, washed, chopped
- 1 bunch red, curly kale, washed, shredded
- 1 bunch rainbow chard, washed shredded
- Freshly ground pepper, to taste
Instructions
- Heat oil in cast iron skillet over medium-high
- Add shallots and saute until softened and brown, 3 -5 minutes
- Add garlic and cook 1 minute longer
- Add greens and cover skillet for 3 - 5 minutes, checking every minute to stir
- Turn off heat
- Serve with your favorite protein on top to create a balanced Paleo meal
