Full of flavor, as well as healthy compounds that support the immune system, adding shiitake mushrooms to any dish adds an extra bit of meatiness!
Ingredients
- 4 oz dried shiitake mushrooms
- 2 tablespoons coconut oil
- 4 cloves garlic, smashed
- 4-6 small bok choy, halved
- Freshly squeezed lemon juice
Instructions
- Place mushrooms in a cup and fill with water to rehydrate; let sit 20 minutes
- Heat oil in cast iron skillet over medium high
- Chop hydrated mushrooms and drain
- Add mushrooms to skillet and saute until softened; roughly five minutes
- Add garlic and cook one minute longer
- Add bok choy and cover skillet; cook two minutes, flipping halfway
- Turn off heat and let sit a few minutes longer
- Finish with a squeeze of fresh lemon juice
