“Oh, so you don’t eat any carbs??”
I can’t tell you how many times I’ve heard that response when I explain my diet to friends, clients, whomever!
I eat LOADS of carbs, I just don’t eat ‘refined carbs’ (except during training!). My diet has tons of fresh, organic produce (fruits and veg are indeed carbs). I eat leafy green vegetables (black kale, spinach, chard, spinach & mustard greens, organic field greens in salad, to name just s few) every day, sometimes raw, sometimes blanched, sometimes flash-sauteed, as well as fruits (such as apples, pears, grapefruit, kiwi, berries; I will often have banana or pineapple immediately post-workout…).
The theme to which I adhere is that I want to eat ‘FOOD’; nothing processed or anything that came in a box or a can or anything that has ingredients that I cannot identify as being something I’d want to eat!
Long story short: it’s not that carbs are bad, rather, it’s the type of carb….You’re much better off choosing healthy carbs in the forms of fresh fruits & veg as the predominant source in your diet, as opposed to highly processed carbs such as white pastas, breads, candies… you get the idea!
