As part of my 1-2-3 cook recipes (less than five ingredients and three steps), this quick and easy recipe for grilled veggies is perfect for your 4th of July BBQ! Color, Flavor and Health Boosting Nutrients all in one!
Ingredients
- Eggplant, Sliced
- Onion, Sliced
- Bell Peppers, Sliced
- Cherry Tomato
- Your choice of health cooking fat (pasture fed lard, grass fed tallow or coconut oil), at room temp (roughly ¼ cup fat per 1 cup sliced veggies)
Instructions
- Heat outdoor grill
- Combine fat with veggies
- Cook until browned and soft, flipping once
