Roasted Sprouts with Shallots

Transform any Sprout Hater to a Sprout Lover with this crowd pleaser of a side dish. Crack a couple of eggs on top to create a perfectly balanced meal any time of day!
Ingredients
- 1 pound organic sprouts, washed and halved
- 4 large shallots, roughly chopped
- 3 tablespoons rendered duck fat (or use coconut oil to make it vegan-friendly), melted
- Optional- Fresh Rosemary, for garnish
Instructions
- Preheat oven to 450, with baking dish inside
- Toss sprouts and fat until well combined
- Place cut side of spouts down on hot baking sheet
- Sprinkle shallots on top of sprouts
- Place in oven and cook roughly 12-15 minutes until shallots are crisp and sprouts are browned
- Remove from oven and let cool 5 minutes before serving
