Curried Tuna Salad on Cabbage

In a pinch, we can use canned tuna as long as it's rinsed thoroughly to remove sodium. Here's a crisp, refreshing option for a quickly prepared meal.
Ingredients
- 1 can albacore
- 2 tablespoon extra virgin olive oil
- Salt free curry powder
- ¼ head cabbage, shredded
- 1 small lime, juiced
- ½ apple, diced
- 1 oz raw cashews
- Freshly ground black pepper, to taste
- Orange slice, for garnish
Instructions
- Thoroughly rinse and drain tuna
- Combine with olive oil and curry powder in small bowl
- Combine lime with cabbage in medium bowl
- Divide cabbage into two portions and place into two bowls
- Top each with a scoop of half the tuna
- Scatter apples and cashews on top
- Grind pepper on top
- Finish with orange wedge
