Bitter Greens + Tomato Summer Salad

Spice up your green routine by adding some bitterness into the mix! Balance it out with a hint of sweet from summer-fresh tomatoes and douse it with olive oil to provide the perfect compliment of fat. Add a piece of your favorite grilled fish to complete the picture with protein and enjoy an easy meal, any time of day!
Ingredients
- 4 cups Dandelion Greens
- 1 cup Cherry Tomatoes
- 2 - 3 T Cold Pressed, Extra Virgin Olive Oil
- 1 large, ripe Avocado
- Pink Peppercorns
- Optional:
- Chopped Fennel
- Freshly Squeezed Lemon Juice
Instructions
- Wash and spin dry the dandelion greens
- Wash and halve tomatoes
- Toss with olive oil
- Add avocado on top
- Sprinkle freshly topped fennel and lemon juice to taste
