Spring Fennel, Apple & Radish Citrus Salad

A crisp foray into spring; a cool balance to any spicy dish such as blackened, wild salmon.
Ingredients
- 2 bulbs fennel, chopped
- 1 large Granny Smith Apple, cored and chopped
- 8 radishes, chopped
- 1 clove garlic, smashed
- Juice of ½ small Navel orange
- 1 tablespoon pistachio oil
- Freshly ground pepper
- 2 tablespoons pistachios
Instructions
- Combine first four ingredients in food processor and pulse to combine, or chop into small, uniform dice, about 1" in size
- Whisk together orange juice, lemon juice, pistachio oil and pepper
- Place vegetable mixture into large, flat bowl
- Pour dressing on and stir briefly to combine
- Scatter nuts on top
