Who ever deemed grains as an integral part of breakfast? Food is food...anytime of day! Use up your leftovers for an easy and delicious start to the day.
Ingredients
- 12 ounces cooked chicken meat
- 4 cups arugula or other lettuce, washed and spun dry
- 2 cups blueberries
- 1 small, ripe avocado
- 1 small lemon, quartered
- 1 teaspoon sunflower seeds or slivered almonds, optional
Instructions
- Shred or dice chicken
- Divide lettuce into two portions and place in two bowls
- Top with half the chicken, berries and avocado
- Squeeze lemon on top
- Scatter seeds or nuts, if using
- Toss to combine
