Wild Opah with Pineapple Mango Salsa

When in Hawaii...eat local, just like when you're at home! A hint of heat balanced out with a hint of sweet makes this salsa the perfect accompaniment for any wild fish.
Ingredients
- 2 pounds wild Opah fillet, skin on
- Freshly ground black pepper
- 2 tablespoons coconut oil
- 1 small, ripe mango, cubed into ½" pieces
- ½ small pineapple, cored and cut into ½" pieces
- ½ cup freshly chopped cilantro
- 1 small jalapeño, seeded and minced
- 2 small limes, juiced
Instructions
- Pat Opah fillets dry with paper towel and season with pepper, to taste
- Heat oil in skillet over medium high
- Sear fish five minutes, flipping over halfway through
- Meanwhile, stir all remaining ingredients together in bowl
- Remove fish from skillet and place under foil on ceramic serving dish
- Let sit five minutes while you steam a batch of your favorite greens
- Serve fish on top of salad, passing salsa
