Mint, Cilantro & Parsley Relish on Pastured Pork

We're not talking 'relish in a jar, laden with corn syrup' here! By capitalizing on fresh, local herbs, we can create a zesty, refreshing flavor profile that works great with with a variety of proteins.
Ingredients
- 2 8 oz bone in pastured pork chops
- Freshly ground pepper
- ½ cup fresh mint
- ½ cup fresh cilantro
- ½ cup fresh parsley
- 4 cloves garlic
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
Instructions
- Preheat oven to broil
- Pat dry pork chops with paper towel and season with pepper
- Combine all remaining ingredients in mini prep food processor and whiz to combine to make relish
- Place chops on wire rack and cook, roughly 20 - 25 minutes, flipping at least once halfway through, until internal temp = 160F
- Remove from oven, tent with foil and let rest 10 minutes
- Meanwhile, steam some of your favorite green leaves
- Serve chops on top of leaves with relish from on top
