Moroccan Cauliflower Couscous

We've all heard of cauliflower rice... why not cauliflower couscous? Prepared in a similar manner using a ricer, but with a flavor profile more indicative of Morocco!
Ingredients
- 1 large head cauliflower, cut into florets
- 2 tablespoons cooking fat such as grass fed ghee
- 2 large shallots, minced
- 1 cup chicken broth
- ¼ cup natural, dried apricots
- ¼ teaspoon each: cumin, ginger, cardamom, allspice
- 1 small, peeled cucumber
- Mint leaves, for garnish
Instructions
- Using a ricer tool, push florets through to create the proper shape
- Head fat in skillet over medium
- Add shallots and saute until browned
- Add broth, scraping bottom of pan
- Add apricots and spices and simmer over low briefly
- Add cauliflower, stir well, cover and let sit 2 -3 minutes
- Serve warm with your favorite protein, or cool, then serve in mason jars with mint garnish
