Best Burgers, Paleoista Style

You can't beat a burger...but you can certainly make it better by grinding your own meat and combing just the right cuts for that perfect balance of taste and texture. Here's my favorite duo!
Ingredients
- ½ pound grass fed short ribs, bones reserved for stock
- ½ pound grass fed chuck
- 4 cups mixed lettuces, including frisee
- 1 cup loosely packed fresh basil
- 2 large Heirloom tomatoes
- Rosemary, for garnish
- Olive oil, to taste
Instructions
- Fire up the grill
- Roughly chop meat from both cuts into one inch pieces
- Place in freezer for ten minutes
- Using the pusher tool, feed meat through grinder attachment of mixer
- Form two to three patties
- Cook two to three minutes on each side, checking internal temperature
- Once 150 is reached, remove from grill and tent under foil
- Throughly wash hands
- Combine lettuces with basil and tomato to create a salad
- Garnish with rosemary
- Drizzle on olive oil, to taste
- Check to see that burgers have reached 160 and serve, pouring drippings on top of salad
