Paleo goes Thai with this easy chicken recipe. Using Butter Lettuce as a vehicle for this savory, light preparation, you're not going to miss the rice!
Ingredients
- 1 pound free range chicken breast
- 2 tablespoons coconut oil
- 2 shallots, minced
- 4 cloves garlic, minced
- ¼ cup fresh mint leaves
- ¼ cup fresh cilantro leaves
- 1 small lime, juiced
- ½ cup homemade chicken broth
- Chili pepper flakes, to taste
- 4 Butter Lettuce leaves
Instructions
- Cut raw chicken into small chunks
- Heat oil in skillet over medium high
- Add shallots and saute until softened, 2 -3 minutes
- Add garlic and cook one minute longer
- Add chicken and cook, stirring
- Meanwhile, combine mint, cilantro and lime in mini prep food processor and whiz to puree
- Add to chicken in skillet
- Add lime juice and broth
- Continue cooking until temp = 160.
- Add pepper, to taste
- Serve in lettuce 'wraps' with your favorite veggies
