Paleoista's Grilled Pesto Lobster

Don't drown it in butter... enhance it with herbs and garlic! A simple Paleo version of an old classic to top of one of the best protein sources we can find make for a perfect pair to enjoy not only on National Lobster Day but any day!
Ingredients
- 2 lobsters
- 1 cup fresh basil leaves
- ½ small lemon, juiced
- 2 cloves garlic
- 1 ounce raw sprouted walnuts
- ½ cup olive oil
- Freshly ground pepper, to taste
Instructions
- Halve lobsters
- Combine all remaining ingredients in food processor and whiz until thoroughly combined; set aside
- Grill lobsters cut side down over medium high heat until shells are bright in color (~ 4 minutes)
- Turn over and spread pesto with a pastry brush onto the meat
- Grill until the lobster meat is an opaque white color (~3 minutes)
- Serve with your favorite mixed green salad or grilled veggies!
