Using uncured bacon from pastured pork and eggs from foraging hens, this easy to make salad is ready in no time!
Ingredients
- 2 pieces uncured bacon (from pastured pork)
- 2 eggs (from foraging hens)
- 1 tablespoon lemon juice
- 1 head butter lettuce
- 2 tablespoons extra virgin olive oil
- Fresh herbs of your choosing
Instructions
- Broil bacon on wire rack
- Meanwhile, bring a pot with two inches of water to boil, then reduce to simmering
- Stir in the lemon juice
- Crack eggs open onto small saucer and let them slide into the simmering water
- Allow to poach for two minutes
- Wash, tear and spin dry the lettuce
- Mix the lettuce with olive and fresh herbs
- Divide the lettuce into two portions and place on two salad plates
- Top each with one slice of bacon and one poached egg
